Yes... it most definitely tastes as good as it looks. Last night I felt inspired to make a raw cheesecake. In the past I tried a few raw cheesecake recipes and I was not completely happy with the final consistency. I'm not sure if it's my food processor or if my standards are too high. They've been good, but I think there's always room to make things better... always!
I took matters into my own hands last night. I thought, which nuts are creamy yet cheesy? Cashews and pine nuts. Boom! The winning combination. The pine nuts add wonderfully to the texture, it is spot on. The crust of this cheese cake is to die for. Add the layer of creamy, melt in your mouth chocolate cheesecake, a scoop of raspberry sorbet and a drizzle of chocolate sauce.... holy raw dessert! This is why you go raw, it's the best food ever!

It's ironic that it has taken me transitioning to raw foods to make cheesecake. I have been baking/decorating custom cakes for the past 2 years. The name of my cake decorating company is Tiny Little Oven Cakes. I've created cakes that look like shoes, ostriches, cars.. just about any request you can think of, except for a good 'ol fashioned cheesecake. The more I eat living foods, the more I want to create living foods. Right now, I am working on bridging these two worlds and focusing on raw cakes. I'll keep you posted on my journey.
