boil boil toil and truffle...

One of my favorite parts of living a raw food lifestyle has been experiencing and learning about raw chocolate, cacao. I started making my own raw chocolate almost immediately after "going raw." I have always loved chocolate, and raw chocolate is something I don't want to live without.

After a few months of eating raw, Dustin and I realized we lived just 30 minutes away from Oasis Living Cuisine. Oasis makes RAW chocolate bars in all shapes and flavors and has a truffle selection that will knock yer' socks off. Enjoying raw chocolate creations from raw chocolatiers like Oasis and Gnosis has inspired me on numerous occasions to make chocolate treats.

A new shipment of vanilla beans and cacao from Gnosis sent my brain into a chocolate creating frenzy. Today I was in the kitchen by 9 am creating raw chocolate truffles. They turned out AMAZING.  The are time consuming, but what better way to spend your time then making delicious home made truffles with the best ingredients ever? The only hard part is not eating them all at once. After rolling and dipping two dozen truffles, I realized I had raw ice cream in the freezer.  This is when the raw experimenting got nuts!

I scooped balls of RAW vanilla bean-pecan ice cream and dipped them in chocolate... just like a truffle. Then, I rolled them in a mixture of nuts, coconut and cacao. It's the same mixture I use on my chocolate covered bananas.  Then, back into the freezer.... they are ice cream truffles!!! 


The chocolate shell gets hard so you can pick up the ice cream truffle and bite into it like an apple... or you can eat it with a spoon. The next step for me is to experiment with different combinations of ice cream and topping flavors. I can guarantee there will be more ice cream truffle posts in the future.
