Going bananas!

Nothing says spring like a good 'ol fashioned BBQ. Well... I eat raw food, so BBQ is somewhat out of the picture. Let's try that again.... nothing says spring like, hmm, chocolate covered bananas?!

Well... today is the day of bananas... chocolate covered, almond covered, coconut covered, and some covered in all three.  I started off by cutting bananas in half, putting them on skewers, and popping them in the freezer for a few hours to firm up. In the mean time, I made a batch of delicious raw chocolate, chopped up some almonds, grabbed some coconut and found some leftover chocolate pie crust (delicious!) Once the bananas firmed up, I used a knife to coat them with chocolate and then decorated them with toppins'. 

Roll the bananas in whatever you like. Be creative! Use granola, chopped goji berries, chopped nuts, bee pollen, almond butter... literally anything. After you're done rolling on the toppings, pop those bad boys back in the freezer for about an hour or until you're ready to feast. If the bananas get too frozen, no biggie, they thaw within minutes. Dustin and I had a bit too much fun eating our bananas... this is how we typically spend our Mondays....
