Day 1

Today was DAY 1 of Project Raw, Rebecca's 30 day raw challenge! We began at Whole Foods, I prepared a detailed shopping list that had everything Rebecca needed to get started.

After stocking up on amazing living ingredients we came back to my kitchen and prepared a smorgasbord of tasty salad dressings, marinades, nori wraps, "mimosas", smoothies and of course... ice cream. Rebecca's first lesson was "Green Smoothie 101" followed by a crash course in "Coconut Cracking" and "How To Make The Best Raw Ice Cream EVER."

My biggest concern was that Rebecca might feel limited or deprived with her new menu. Since this is the exact opposite of what the raw lifestyle is about I wanted to be sure to prepare an appealing variety of foods for her. Everyone's tastes and needs are different, I explained to Rebecca that this first week will be a learning experience for both of us. By the end of the week we will both have a better idea of how much food she needs and what flavors she gravitates towards. Today I taught Rebecca a mixture of the basics and my favorites...

These mimosas are an original creation of Dustin's.  We were attending our first New Year's Eve party since going raw. What were we going to put in our glasses? We knew we didn't want to consume alcohol but we wanted something fun and festive.  Dustin saved the evening when he thought up this creation, it tastes just like a mimosa.... minus the hangover!

It's as easy as pie, raw pie of course. Making raw mimosas is so simple it almost seems silly to call this a "recipe," but for lack of a better term... here's the recipe:

Dustin's Delicious Mimosas

1 Original flavored GT Kombucha
4-6 oranges (juiced)

Simply mix the Kombucha with freshly squeezed orange juice. Pour into fancy glasses because... well, fancy is always more fun, then enjoy. This is one of the most revitalizing drinks you can create. It's loaded with probiotics and vitamins and is perfect with breakfast or at parties.

We also created a new flavor of raw ice cream...
vanilla almond ginger!

Rebecca and I share a love for ginger so this flavor is absolutely wonderful (in my opinion.) Follow the recipe for Just Plain 'Ol Delicious and add a bit more almond extract and about 1/4 c. of freshly chopped ginger. Try adding cinnamon for a taste explosion.

Visit Rebecca's blog to read about what she's eating on her raw journey and how she really feels about it. If I have anything to do with it....which I do, Rebecca will be creating her own tasty RAW dishes in no time. The ginger ice cream was her idea which makes me think she's already on her way!
