Dustin couldn't decide if he wanted pesto raviolis or pizza for dinner... and so, we decided on pesto pizza. I used my usual pizza crust and pizza sauce recipe. The cheese is made of cashews, lemon juice, garlic, nutritional yeast, salt, and cayenne.... it's the best "cheese" I have had. I wish I could post an exact recipe but I usually create everything "to taste", without measuring. Next time I will document everything as I go. The pesto is made of fresh basil (from the plant growing in my kitchen), pine nuts, cilantro, cayenne, garlic, salt and pepper. Once assembled, I put the pesto pizza in the dehydrator for a few hours to warm up... delicious!

I will be teaching Rebecca, "the raw food virgin," how to create a similar dish tomorrow night. Tomorrow will mark our first meet up since Sunday, the start day of Project Raw. For those who missed the initial post explaining Project Raw, Rebecca is participating in a 30 day raw challenge. The challenge for me is to be her personal chef, raw educator, and all around life coach. My goal is to teach Rebecca as much as I can about the raw food lifestyle, all while creating amazing raw food for her to enjoy along the way. I love this challenge. Creating raw food for a "skeptic" is extremely motivating and inspiring. This experience is teaching me so much about "myself." My life is about learning, growing, and pushing myself past comfort zones to experience new realms... more on this later!
