
After yesterday's banana fun, I decided I need to take things to the next level. I decided the only thing better then raw chocolate truffles is raw chocolate truffles on a stick! Wouldn't you agree?
You can serve these truffles with or without the sticks, smush them flat and make cookies or even turn them into cake. It's a pretty diverse recipe, it may need some tweaking depending on your ingredients. I've been noticing different brands of agave and dates are sweeter then others. The easiest way to create great tasting raw food is to TASTE as you go. This was the first thing Raw Chef Michele taught me. A recipe will never work exactly the same twice. Produce changes in flavor every day. Grocery stores/farmers markets have new produce daily. Taste as you go and you will be creating amazing tasting raw treats and snacks in no time!
Meredith's Raw Chocolate Truffles...On a Stick
2 1/2 C. almonds (grind them into a flour)
1 1/4 c. pitted dates
1/4 c. melted coconut oil
1/8 c. spring water
1 tbsp. vanilla extract
3-5 tbsp. cacao
1/2 tea. sea salt
Put the ground almonds in a bowl and set aside. In your food processor, mix the dates until they're gooey and form a sticky paste. Add the remaining ingredients to the food processor: coconut oil, spring water, vanilla extract, cacao, and sea salt. Blend until everything is mixed well. Transfer mixture to a mixing bowl. Beat on high until mixture is "whipped". Add in ground almonds slowly until mixture forms a big ball.
For truffles: form the chocolate mixture into small balls. Then, make a batch of your favorite raw chocolate. Or you can purchase a raw chocolate bar and melt it in your dehydrator at 105 degrees. Put the truffle balls on skewers, dip them in the chocolate, and roll them in whatever topping you'd like. My favorites are coconut, chopped almonds, chopped goji berries and lucama powder.
