
Yesterday Dustin and I attended the Boulder Farmer's Market for the first time since we've been here. Best farmer's market ever! In order to participate in the farmer's market you must grow within Boulder County. In rare cases the market will make an exception and allow produce that is grown outside the county, but it still must be grown within Colorado. I juice fresh greens everyday, I am really excited to have access to fresh, organic produce that was picked that very day.
I purchased an assortment of greens from the market: spinach, bok choy, sunflower, sprouts, cilantro, romaine, and other leafy greens... along with an amazing red pepper and a variety of medicinal mushrooms. As Dustin and I were walking back from the market we each ripped a leaf from the bok choy bundle and sampled it... woah chlorophyll! I have NEVER tasted bok choy like this... you could literally taste the chlorophyll, the minerals, the freshness.
I felt like I had tasted bok choy for the first time in my life. The spinach hit my taste buds the same way... it tasted like spinach times 20! It tasted how spinach "should" taste, fresh and vibrant. I always purchase organic greens from the super market, but my entire perspective on "FRESH" produce has shifted. I will be purchasing my greens fresh every Wednesday and Saturday from now on!
Today's green juice was stronger then ever. I have been drinking a large green juice every morning for the past nine months. The taste of juiced greens doesn't phase, dandelion greens are no longer bitter, I crave green juice and look forward to it daily. But today's green juice was the strongest, freshest tasting juice I have yet to experience. Even Bug, our 7 pound boston terrier, took a few sips of her green juice, licked her lips, and just starred at me.
I am so grateful to live in a place where I have easy access to freshly picked greens, I'm excited to feel the positive impacts this has on my health... and Dustin and Bug's health too!



It's so funny how a big jar of green juice can make my mouth water like that. ;)
