When we first arrived in Boulder I was feeling heavy and "backed up." I had been eating raw chocolate bars for 3 days while traveling cross country in a Budget truck while getting minimal sleep. If a little taste of digestion trouble is the worst thing that happened on our journey... I'll take it! To remedy the situation, I focused on blended foods for a few days. Blended foods and fresh juice are easy to digest and absorb, giving your body a chance to focus it's energy on other areas. Within a day or so I was feeling great and everything was flowing as usual. A recipe that I whipped up while focusing on blended foods was cantaloupe soup. This was easy, delicious, and I have made it twice since we arrived here in beautiful... sunny.. lovely... Colorado!
Crazy Good Canteloupe Soup
1 canteloupe
1 tea. cinnamon
1 tea. mesquite
1/2. tea. curry
1. Scoop out the seeds and muck, and remove the skin. This doesn't have to be done in any particular way... bottom line, everything will be blended.
2. Set aside half the cantaloupe, put the rest in your blender along with the cinnamon, mesquite and curry. Blend until smooth.
3. Add the remaining half of cantaloupe to the blender, and pulse a few times so it's blended but a bit chunky.
4. Pour into your favorite handmade wooden bowl, sprinkle with mesquite and enjoy by the mountain of your choice.
*play around with the seasonings and adjust to your liking. this soup has a great autumn feel... but it's great for right now as well!
