
I started off today making a raw calzone. It's one of the heartiest, raw meals that I have ever made... it's been awhile since a raw calzone has surfaced in the kitchen. It was well overdue.
Early on my raw journey I purchased Alissa Cohen's book Living On Live Food. Dustin and I immediately knew we had to try making her raw calzone recipe. I'm not very good at sticking to recipes, so I followed some of her basic technics and added my own twist. Since then, I have made numerous raw calzones, at this point I have strayed far from the recipe. Alissa Cohen's book introduced me to many ingredients and techniques that were foreign when I first began eating living food. Her book gave me a crash course into raw ingredients, since then I have learned so much from experimenting on my own, you have to learn the rules to break the rules. When it comes to raw food.. learn the basics and then let your imagination have a field day.
Today's calzone is filled with nutmeat sausage, chopped veggies, zesty tomato sauce, "mozzarella" cheese, and "steamed" spinach. It is dehydrating and will be ready for tomorrow. More importantly... while making the calzone a recipe hit me! Sometimes this happens while driving, while sleeping, while hiking, I never know know when they're going to appear... and for the record, they don't always turn out as great as they did in my mind. Today's however... was a hit! For a "first time" recipe, they turned out better then I could've imagined. Even my brother (who eats cooked food) said he was impressed. There are a few changes that I will make for next time, but overall... these were absolutely amazing. What were they, you ask? Warm, gooey, RAW cinnamon buns (with glaze!)
