Raw Retreat Part 5 - Mexican Feast, Birthday Cake, and Upcoming Retreats!

It was going to be a challenge to "one up" the Indian Feast. With one dinner service to go, it had to be super! The Mexican Feast is always a (serious) hit. No one EVER believes it's raw. Tortilla chips, taco shells, taco "meat," sour cream, mango salsa, tomato salsa... it's divine! By this point in the retreat, the guests are more comfortable with raw food and all the possibilities. I taught a class earlier in the day where we create a Mayan Chocolate Cheesecake for this dinner service. Involving the guests in the process is very important, everyone needs to connect with the food they are eating. It's important to create in one's life, creating with food is one of my favorite ways!


The Mexican Feast Menu consisted of:

Spring Salad
With your choice of Fiesta Rance Dressing, Creamy Ceasar, Lemon & Olive Oil

Hard Shell Tacos and Tortilla Chips Served With:

Toppins' Galore
Red Pepper Cheese, Sour Cream with Chivces, Fermented Cashew Cheese, Mango Salsa, Cherry Tomato Salsa, Guacamole (two varieties: mellow and HOT), and Taco "Meat."

Fiesta Mushrooms
Mushrooms, red peppers, and onions tossed lightly in olive oil and fresh herbs then "baked" to create the perfect taco filling.

Mayan Goddess Cheesecake
Just like the Ancients, we combined rich raw cacao with fiery cayenne pepper in this divine cheesecake... fit for a queen!

Coconut Haystacks
More raw chocolate goodness.... raw cacao paired with shredded coconut to create a haystack like no other.

And.... it was amazing! Absolutely amazing! We served thirds.. and fourths.. and I do believe I saw someone go back for fifths.... but I won't mention any names (H.H.)

Aside from all the Fiesta Fun... there was more to come. We were celebrating the birthday of one of the attendees: Travis! Little did Travis know, I had been preparing a delicious raw chocolate cake for the occasion. It was a challenge to keep Travis and his special lady Irini out of the kitchen BUT I really wanted the cake to be a surprise. At one point, I literally chased them away with a wooden spoon. Here is a picture of Travis preparing his taco... little did he know a delicious RAW cake was about to manifest in his (very near) future!!!

When we were all seated, we turned off the lights, began singing.. and served the cake in all it's glory! I created a "vanilla" cake with chocolate frosting and fresh berries in between the layers..... ooooooh man!


I called on my professional cake cutting skills and managed to serve a 6 inch round cake to 23 people!

Creating raw cakes is one of my favorite aspects of raw food. Prior to eating this way, I created custom wedding/special occasion cakes. Making the transition from baked cakes to raw cakes was easy and extremely inspiring. I am promoting my raw cakes more and more, I want to book more weddings and cake jobs! (hint.. hint.. wink.. wink!!!) Here's a picture of Travis and his cake moments after he blew out the 'ol candles. The birthday cake was an awesome addition to the evening.

After dinner Cat had prepared a class focusing on natural, raw, beauty solutions. Why put something on your SKIN if you wouldn't be willing to put it in your mouth? So many people rub toxic chemicals on their face, body, hair... everyday without realizing the damage they are actually doing to their body. Cat's class taught recipes for facial masks, foot scrubs, moisturizers, lotions.. and potions galore!!! I love Cat's shirt, "Got Carrots?"

It was the final evening of our retreat and we wanted to say "thank you" to everyone who made it such a memorable weekend. Our sponsors had all sent yummy raw goodies for us to gift to the retreat attendees so we played a trivia game and gave away delicious prizes from Kaia Foods, Wilderness Poets, Hurraw Balm, Lydia's Organics, Solay Wellness, and The Raw Food World!

Unfortunately, some of our guests had gone to bed or left for the evening so we were not able to get a FULL group shot. But, here's a few of us with all our goodies!

It was sad to leave the retreat center the following day.
