It has been a couple weeks since the release of Padmapani's Raw BBQ E-Book. I have been receiving wonderful feedback - thank you to everyone who has written with their positive recipe experiences! I welcome not-so-positive feedback as well... it only helps m grow! With the BBQ Feast released, I am now focusing on my FIRST paperback recipe book. I'll keep you posted with details as I move through the process of self-publication, yay!!!

I have been LOVING one specific recipe from the BBQ recipe e-book, Raw Chipotle Mayo... delicious! This recipe has been such a 'keeper' in my kitchen because you can use it for so many things. I like to create recipes that have multiple uses, this helps you get more bang for your buck, more bang for your time.. and your taste buds get to repeatedly thank you. The Chipotle Mayo is made with a cashew base so it's extremely smooth, creamy, and rich. Savory Chipotle Powder is used to add smokey heat to this addicting sauce! You have been warned, it is addicting...

My first way to use this "mayo" as a sandwich spread. It's incredible on the "Bun Bread" recipe in the BBQ Feast E-Book. Sandwich fresh tomato slices, cucumber slices, onion and avocado between two slices of Bun Bread with a generous coating of Chipotle Mayo and you will be set... for life! I also love using this "mayo" as a veggie dip, it will take carrot sticks to a whole new level. Aside from that, try spreading the "mayo" on sheets of nori, then dehydrating until completely crispy. It's a variation of "noritos" with a less cheesey flavor and more kick! But wait.. there's more! Want to spice up those zucchini OR kelp noodles? A generous plop of Chipotle Mayo will do the trick... garnish with diced scallions and fresh cilantro... did I mention it's addicting? You can try the recipe and come up with your own uses, the possibilities are endless!

Chipotle Mayo
from Padmapani's Raw BBQ Feast E-Book


1 1/2 cups cashew (soaked 6 hours - overnight)
3/4 cup water
1/8 cup apple cider vinegar
1/8 cup raw honey
2 tsp. garlic powder
3/4 tsp. sea salt
1/4 tsp. paparika
1/8 tsp. chipotle powder
2 lemons - juice only
1 garlic clove

1. Rinse and drain soaked cashews. Add all ingredients to your blender, blend until smooth and creamy. Store in a glass container in the fridge for up to 7 days. Enjoy!
